Tough Toddler eats vegetables Finally!

My 16 month old finds ways to spit out mushrooms, avocado, tomato and basically anything good for him. I tried hiding it in various other food types but he would find that tiny piece of mushroom or avocado in his mouth, separate it from the rest of the food and spit it out. Arghhh. He is a smart one and won't be easily fooled.
So my next trick is....to finely cut whatever they won't eat and hide it in a Quesadilla. I put hummus on as a base then avocado, tuna, mushrooms or whatever your child wont eat (all finely cut) and then to totally disguise it all sprinkle a good layer of low fat cheese over the top.
There is something about eating a Quesadilla that can hide anything you want to put in it...as long as there is cheese involved!
To make it even healthier I buy the brown/whole wheat Quesadillas these are much better for you than the bleached flour versions.
